RYAN BOLTON AND LOREN GAUTIER
A Mississippi Gulf Coast native, Ryan Bolton has always known his love for his hometown would lead him to exactly where he is today. So when this opportunity presented itself, he knew the one chef that could help him turn their college dream into a reality: his longtime friend and Ole Miss classmate, Loren Gautier. Gautier, who trained at The Culinary Institute of America in Napa Valley and then worked in New Orleans at Sobou, shares the same dream as Bolton.
Together, this dynamic duo have created a unique culinary experience that is lighting up the downtown Biloxi Area. Through creativity and innovation, One Thirty One is prepared to shock the Coast with familiar dishes done in a completely new way.
Working diligently to expand the culinary excellence of the Mississippi Gulf Coast, One Thirty One aims to serve locals and tourists something special. From the farmers to the fishermen, One Thirty One works with local industries to help build up the Coast economy and show off the riches that are here to enjoy. The mission of One Thirty One is only made possible by the community.
One Thirty One is an ode to Biloxi and the Mississippi Gulf Coast. They’ve sourced historical images from the Biloxi Library to create a gallery wall along their staircase to showcase pictures of Biloxi’s past.
To get a glimpse of the past and taste the future of downtown Biloxi, visit One Thirty One. Be sure to stop by on the second Sunday of every month for a special treat: brunch from 10 a.m. to 2 p.m., accompanied by a gospel choir. Shows take place at 11:30 a.m. and 1 p.m. Reservations highly recommended.
