We’ve all heard of, and no doubt used, the expression “big things come in small packages.” The idea that the value and worth of an object shouldn’t be gauged based upon its size is powerful and indicates that although something may be miniature in size, its importance and worth is no less significant.
If you apply this concept to food,
one may think that a great restaurant needs a large space, modern décor, or a fancy menu to draw a crowd. However, sometimes just the opposite is possible. In Downtown Biloxi, just across the railroad tracks, sits a quaint little building that houses some of the biggest and baddest soul-food cooking you can find. With an unassuming storefront and simple outside dining patio, Exclusive Dining & Catering (EDC) is a small local spot making quite
the big impact inside and outside of the kitchen.
Owner and EDC proprietor Chef Sherman Kyse, Jr. got his start in the kitchen helping his dad fry turkeys during Thanksgiving. It was here that Chef Sherman developed and nurtured his love for cooking. While working on his business degree at Alcorn State, Chef Sherman earned a living as a line cook at the local Waffle House. There, he learned to prepare good food fast, even cooking and selling hamburgers out of his dorm room for extra money.
After college and working as a sous chef at a local casino for four years, Chef Sherman joined a team of offshoremen as a galley cook. He was quickly promoted to head chef after just one week. He challenged himself to cook delicious and
