Debate not the allowance of a Mexican Pizza in this article because it is 100 percent acceptable! It encompasses all of the necessary parameters of a regular pizza, just with a little extra kick.
Lynn Parkhill, owner of Taco Sombrero, has been serving Mexican Pizzas at all three of his Coastal locations since 1998. He believes the dough is the most important component of any good pizza, which is why he uses a special recipe tortilla that is perfect for frying and withstanding the weight of the incoming ingredients. Taco Sombrero adds an in-house pizza sauce to its Mexican Pizza, along with regular taco ingredients like beans, meat, and cheese. It’s the perfect alternative when you’re wanting to kick your pizza up a notch.
Last, but certainly not least, is my personal favorite pizza style: the wood- fired pizza. There’s something about a crisp and slightly charred crust that really brings it home for me. Michael and Stephanie Paoletti, owners and co-chefs at Food, Booze, Hiccups (FBH) in Ocean Springs, are serving up their own versions of wood-fired pizzas each Wednesday. The menu changes weekly and the ingredients are eclectic, original and delicious. Featuring a special hand tossed dough and a homemade sauce using fermented tomato water, FBH’s pizza are fun and different and a great way to break up the monotony of your everyday pepperoni. Michael believes that people love pizza because it’s nostalgic and fun and the possibilities are endless.
