  A NEW BUTCHER IN TOWN
 There's a new way to shop in Pass Christian with the recent opening of the TBT Butcher Shop. Or maybe it's a case of everything old is new again. TBT stands for The Blind Tiger, the successful restaurant chain in several Coast locations that now includes the Marina Cantina restaurant.
“Butcher shops are coming back because people want to know their butcher and where their meat comes from,” says the restaurant group's corporate chef Chris Scivally, who also manages the butcher shop. “We can prepare something special for you – maybe chateaubriand for a holiday dinner – that you can then take home and roast.”
The shop does production work for the company's restaurants working with general managers and kitchen managers that Scivally says helps maintain food consistency.
“The Pass Christian community has few options so we decided to offer retail items that include prime rib, ribeyes, strips, filets, pork chops stuffed with boudin and local seafood,” Scivally said. “We are bringing in as many local products as we can.”
Now they're adding some grocery items such as dried beans, seasonings, oils,
hot sauce and fish fry, along with
grab-and-go foods such as smoked
tuna dip and ready-to-roast vegetables.
The smoked tuna dip is the most popular prepared food and the meats sell equally. “We've got quite a following going, and based on volume will add more things,” Scivally said.
Another popular grab-and-go item is the smash burger that's for sale five days a week. “That's also a food trend these days,” Scivally says. “It's ground filet and ribeye steak that's a byproduct of us cutting our meat. The burger is smashed to order.”
The butcher shop is open 10 a.m. until 6 p.m. Wednesday through Saturday and 10 a.m. until 3 p.m. on Sunday.
Additionally, the TBT Butcher Shop fills orders from shoppers in Meridian, Batesville and Starkville that are delivered to local pick- up locations once a week. A Jackson pick-up location is coming soon.
