Mardi Gras made sweeter with Scarlet Pearl cakes
D’IBERVILLE — King cakes are no doubt the first thing people think about when it comes to the Mardi Gras season. Before looking at parade schedules, buying throws and attending balls, people want to know when they can start enjoying the delicious round cakes topped with purple, green and gold sugars. Allison Spicer, pastry chef at Scarlet Pearl Casino Resort, knows firsthand the excitement
created by the dessert as by the time Fat Tuesday comes, she and her team will have rolled, filled, baked, decorated and boxed thousands of king cakes.
In order to keep a supply
of fresh cakes, the bakery
team starts early each morning rolling the dough and filling the cakes with Bavarian cream or cream cheese, plus fruit flavors, such as strawberry, blueberry, lemon and
raspberry. The cakes are then shaped, and the dough is given time to rest and rise a final time before baking. After that proofing period, the cakes go into the oven to bake.

When the cakes have cooled after baking, it is time to decorate. First comes the luscious white icing, which is carefully scooped on to each cake and is allowed to run down the sides. The boxed king cakes are then taken to Lounge Nocherie in the casino lobby, where they sell very quickly. Ordering a cake in advance is the best way to assure the flavor you want will be available, Spicer said, adding they make a set amount each day so that the king cakes are always fresh when purchased.
