We tried the chicken pho, first enjoying the fragrance before adding our toppings (a bit of everything) and then scooping up the thin rice noodles, tender pieces of chicken and rich broth.
Popular at the noodle bar is the combination pho; the bun bo hue, which has rice vermicelli, pork and beef; sichuan dan-dan, thin noodles topped with ground pork; and banh mi, traditional Vietnamese sandwiches, dressed in pickled carrot and daikon, cucumber, cilantro, pate and mayonnaise, served on locally sourced bread from Henry’s Café & Bakery, a Vietnamese restaurant and sandwich shop.
At the sushi bar, guests will find all their favorite rolls, nigiri and sashimi specialties. The Jia roll includes lobster tempura topped with poached shrimp, eel sauce, spicy mayo and tobiko, while another favorite is the Mississippi roll. This crunchy roll has spicy tuna and is topped with tempura crunchies and eel sauce. Both of these rolls are delicious, and the bright taste of the fresh fish shines through.
Of course, you don’t have to sit at the noodle bar or the 14-seat sushi bar to enjoy their offerings. Dine in the expanded dining room and order from the complete menu,

including bo tai chanh (rare beef salad), chicken lettuce wraps and crispy firecracker shrimp tossed in spicy mayo,allshareabledishes.
Following the pho, we had both fresh spring rolls (those wrapped
in rice paper and served with spicy peanut sauce) and the crispy spring
rolls, fried with a nice crunch to each
bite. The rolls have a combination
of shrimp and pork, but there are also vegetable versions of each, which gave us a great variety to enjoy.
Chef Wade directed us to some of the new entrées, and the thit heo kho (braised pork belly) and ca hoi rang muoi (crispy salmon) caught our attention right away. Very popular in Asian cooking, pork belly is a boneless and fatty cut of meat. Prepared correctly, it has a delicious, rich flavor that
